What you need

star anise

cup soy sauce
bunch bok choy

cup sugar

cup vinegar

shiitake mushrooms

cup rice wine

Instructions
1. Season then sear hocks on all sides. Remove from pan and set aside. 2. Combine mirin, vinegar, soy sauce, sugar, star anise, and water in a pot. Over medium heat, bring to a boil, stirring regularly until sugar is dissolved. 3. Return hocks to the pot and boil on high for about 5 minutes. 4. Lower heat, cover, and continue to cook for about 2 to 2 ½ hours or until meat is very tender and almost falling off the bone, adding water as needed.
