What you need

lb raw shrimp

oz mung beans

tbsp soy sauce

tsp sugar
cup broth

tbsp chicken bouillon

Instructions
1. Season shrimp with salt and pepper, sear until medium rare, then remove from heat. 2. Soak munggo beans in water overnight or boil them directly from the bag before cooking. 3. Dice the onion and tomatoes, and mince the garlic. 4. Sauté onion, garlic, and tomatoes in a pot. 5. Add the munggo beans to the pot and season with soy sauce, patis fish sauce, vinegar, chicken bouillon, pepper, and sugar. 6. Pour in 10 cups of broth or water, ensuring beans are covered. Let simmer for about 1 hour until beans are soft and slightly mushy. 7. Add the seared shrimp and a whole bag of spinach to the pot. Simmer and stir until the spinach is wilted. 8. Serve the munggo with rice and chicharron or lechon kawali.
