What you need

clove garlic clove

tsp pepper

cup vinegar

tsp salt

chicken thigh

in fresh ginger

tsp achiote powder

cup juice
Instructions
1. Cut a slit through the thick portion of each chicken thigh. 2. Marinate the chicken in vinegar, calamansi juice, ginger, garlic, salt, and pepper for at least 4 hours. 3. Simmer the remaining marinade and add butter, achuete powder, and salt to create the baste sauce. 4. Place the chicken on a rack and roast at 400 degrees Fahrenheit for 45 minutes. 5. Baste the chicken every 15 minutes with the sauce.
