
Beef Short Rib Kare Kare

A rich, peanuty Filipino stew made with melt-in-your-mouth beef short ribs, creamy peanut sauce, and a variety of vegetables. This savory and nutritious dish is comfort food at its finest, especially when paired with bagoong and rice.

What you need

cup roasted peanuts
fresh garlic

lb short ribs

tbsp table sugar
bunch bok choy
cup broth
tbsp oil

tbsp black pepper

cup peanut butter

onion

eggplant

tbsp achiote powder
Instructions
1. In an Instant Pot, sauté diced onion and garlic. 2. Add achuete powder, bagoong shrimp paste, black pepper, sugar, ground roasted peanuts, peanut butter, Mama Sita’s Kare Kare mix, and broth or water. 3. Bring mixture to a boil. 4. In a separate cast iron pan, season and sear short rib until browned and crusted. 5. Add seared short ribs to the broth in the Instant Pot. 6. Set Instant Pot to High for 50 minutes until ribs are tender. 7. Slice eggplant, and prepare sitaw and bok choy. 8. Oil and season the vegetables with salt, pepper, and garlic. 9. Broil or fry vegetables until tender and slightly charred. 10. In a cast iron pan, add some Kare Kare gravy. 11. Layer in the short ribs and seared vegetables. 12. Serve with fresh white rice and more bagoong. 13. Top with more Kare Kare gravy.
