Instructions
1: In the Instant Pot, add and sear diced onion and garlic. 2: Add 1 tablespoon each of Atsuete powder, bagaong shrimp paste, black pepper, sea salt, and sugar. 3: Mix in ½ cup of finely ground roasted peanuts and ½ cup of Jiffy peanut butter. 4: Stir in 2 packets of Mamasitas Kare Kare mix and 10 cups of broth or water. Bring to a boil. 5: In a separate pan, season and sear 3 pounds of short rib on high heat until a nice crust forms. 6: Add seared short ribs to the broth in the Instant Pot and set to High for 50 minutes until ribs are tender. 7: For the vegetables, season and sear 1 pound each of sliced Chinese eggplant, Sitaw (green beans), and Bok Choy in oil until tender and slightly charred. 8: In a sizzling hot cast iron pan, layer in short ribs, veggies, and 1 cup of rice, then top with more bagaong and broth.View original recipe
