Instructions
1: Season and sear the rib eye steak on all sides until medium rare, then remove from the pan. 2: In the same pan, sauté the diced onion and minced garlic. 3: Add 1 cup of water or broth, Kare Kare seasoning, achuete powder, peanut butter, and Bagoong, then simmer until thickened. 4: In a separate baking pan, add sliced Filipino eggplant and sliced baby bok choy, drizzle with oil and SPG seasoning, then broil for about 5 minutes until browned. 5: Layer the sliced steak, broiled vegetables, and white rice on a plate, then smother with the Kare Kare gravy. 6: Top with additional Bagoong as desired.View original recipe
