Instructions
1: Soak munggo beans overnight or boil them until softened. 2: Sear whole shrimp seasoned with salt and pepper until medium rare, then remove and set aside. 3: In the same pot, add oil, diced onion, minced garlic, and diced roma tomatoes, and sauté until fragrant. 4: Add the soaked munggo beans and sear while adding soy sauce, vinegar, chicken bouillon, bay leaves, pepper, and sugar. 5: Pour in enough broth or water to cover the beans and let simmer until they achieve a soft texture. 6: Add the seared shrimp back into the pot along with a whole bag of spinach; simmer until wilted. 7: For Lechon Kawali, boil pork belly with half an onion, garlic, bay leaves, salt, and peppercorn until soft. 8: Remove the pork from the water, pat dry, and deep fry until brown and crispy, then slice and add to the munggo.View original recipe
