Monggo with Shrimp and Pork Belly

What you need

Instructions
1: Season whole shrimp with salt and pepper, then sear until medium rare. Remove shrimp and set aside. 2: In the same pot, add oil and then add soaked Monggo beans. 3: Sear mung beans while adding diced onion, minced garlic, diced tomatoes, soy sauce, vinegar, chicken bouillon, bay leaves, pepper, and sugar. 4: Add about 10 cups of broth or water to cover the beans and let simmer until beans are soft. 5: Add back the seared shrimp and a whole bag of spinach to the pot, simmer and stir until spinach is wilted. 6: For lechon kawali, boil pork belly with half an onion, garlic cloves, bay leaves, salt, and peppercorn for about 20 minutes until soft. 7: Remove pork from water, pat dry, and deep fry until brown, then double fry until very crunchy. 8: Slice lechon kawali and add to the Monggo before serving.View original recipe
