This Pork Belly Adobo is a delightful twist on the standard dish. It features chunks of seasoned and fried pork belly that are braised until super soft and tender. The recipe includes a flavorful marinade and is perfect served with rice.
Cut pork belly into chunks and season with SPG.
Fry all sides of the pork belly until a nice crust is formed, then remove from oil.
Sear ½ diced onion and 1 minced head of garlic in the same pan.
Add the adobo marinade: soy sauce, vinegar, bay leaves, cracked black pepper, brown sugar, and water.
Lid the pan and place it in a preheated oven at 400 degrees to braise for about 30 minutes, until super tender.
Remove from oven, add the remaining ½ onion slices, and mix until onion reaches your desired tenderness.
 Serve with rice and enjoy.
