Mongo is a traditional Filipino comfort food made with mung beans to create a hearty soup. In this recipe, whole seared shrimp and fried lechon kawali (pork belly) are added for richness. This dish is both flavorful and filling.

What you need

tbsp soy sauce

tsp sugar

spinach

salt

peppercorn

tbsp chicken bouillon
lb pork belly

Instructions
1: Season shrimp with salt and pepper, then sear until medium rare. Remove and set aside. 2: In the same pot, add oil and sear diced onion, minced garlic, and diced roma tomatoes. 3: Add soaked Mongo and season with soy sauce, vinegar, chicken bouillon, bay leaves, pepper, and sugar. 4: Pour in enough broth or water to cover the beans and let simmer until beans are soft. 5: Add back the seared shrimp and a whole bag of spinach, stirring until wilted. 6: For lechon kawali, boil pork belly with half an onion, garlic cloves, bay leaves, salt, and peppercorn for about 20 minutes until soft. 7: Pat dry the pork, then deep fry until browned, remove and let rest for 5 minutes. Double fry until very crunchy. 8: Slice lechon kawali and add it to the Mongo or enjoy it whole.View original recipe
