Instructions
1: Marinade chicken in calamansi (or lemon or lime), patis fish sauce, and pepper for at least 4 hours. 2: Boil chicken for at least 20 minutes in a pot with water, whole garlic, whole onion, bay leaves, and 1 tsp salt and pepper. 3: Remove chicken and brush entirely with a mix of soy sauce and water.
