1: Marinade the chicken for at least 4 hours in a mix of calamansi or lemon or lime, patis fish sauce, and pepper. 2: Boil the marinated chicken in a pot with whole garlic, whole onion, bay leaves, and salt and pepper for at least 30 minutes. 3: Remove the chicken and brush it entirely with a mix of soy sauce and water.
