1: Cube and season the pork belly with SPG, then heavy sear over high heat. 2: Boil the pork for 20 minutes and drain to render fat and tenderize. 3: Sear minced whole garlic and diced onions to make the Bistek sauce. 4: Add soy sauce, calamansi juice, black pepper, corn starch, and sugar to the sauce. 5: Add the pork back to the sauce and braise covered for 25 minutes until tender. 6: Add onion rings and bok choy on top, cover and steam until cooked.
