Sinigang Noodle Soup is a tangy Filipino dish that is especially comforting during chilly weather. This soup is loaded with various vegetables and features pork that is seasoned, seared, then boiled for tenderness. The addition of tamarind paste and a Sinigang seasoning packet enhances the flavor. Sotanghon mung bean noodles add a fun springy texture, making this dish both vibrant and satisfying.

1: Cut pork shoulder or belly into cubes and season with SPG, then sear all sides. 2: Boil the pork for at least 20 minutes to render out fat and tenderize, then drain. 3: In the same pan, sear the string beans until slightly charred and softened, then remove. 4: Sear the diced onion and minced garlic in the same pan. 5: Add 10 cups of water or broth to deglaze the pot. 6: Stir in 2 tablespoons of patis fish sauce, 2 tablespoons of tamarind concentrate, and the Sinigang seasoning packet. 7: Add the pork back into the pot and boil for about 30 minutes until the pork is super tender. 8: Then add the seared green beans, diced roma tomatoes, banana peppers, and sliced carrot. 9: Cook spinach or Kang Kong until just al dente. 10: In a separate pot, boil sotanghon noodles in seasoned water or with some of the sinigang broth for maximum flavor.
