1: Grab a Prime rib eye, season it well with SPG, and let it rest to room temp. 2: Get your cast iron pan screaming white hot. 3: Set the meat flat on one side for about 3 minutes without touching it until a beautiful crust forms. 4: Turn it and sear the edges before flipping it. 5: Immediately turn down the heat to medium, then add butter, garlic, and fresh rosemary. 6: Baste the steak all over then remove from pan and let rest for at least 5 minutes. 7: Score, season, sear, then roast some golden potatoes at 425°F for about 20 minutes until some crispy crust forms, while the center is tender and soft. 8: Top the potatoes with sour cream and crispy bacon.
