This one pot meal combines chicken, brown rice, and a variety of spices for a flavorful dish with less mess. It features seared chicken on top of seasoned rice baked to perfection and topped with cheese. A great Southwestern twist on a classic!

1: Season the chicken with salt, pepper, and garlic, then sear both sides and set aside. 2: Sear diced onion, bell pepper, and garlic together. 3: Add the washed brown rice and butter, then sear everything together. 4: Pour in the chicken broth and add chicken bouillon, pepper, garlic powder, onion powder, cumin, chipotle, and red pepper; stir well. 5: Place the seared chicken on top of the rice, cover, and bake at 375 degrees on the lower rack for 45 minutes. 6: Broil on the top rack for about 5 minutes until the skin is crispy, and top with cheese.
