1: Cut the pork shoulder or belly into cubes, season with SPG, and sear on all sides. 2: Boil the seared pork for about 20 minutes to render out fat and tenderize. 3: In the same pan, sear the string beans until blistered and charred, then remove. 4: Sear the diced onion and minced garlic in the same pan. 5: Add back the drained pork and about 10 cups of water or broth. 6: Stir in the patis fish sauce, tamarind concentrate, and the Sinigang seasoning packet. 7: Boil for another 25 minutes until the meat is totally soft. 8: Add the seared green beans, diced Roma tomato, whole jalapenos, and julienned carrot. 9: Finally, add a bag of spinach and cook until just al dente.
