1: Cut potato, carrots, onion, and red bell pepper into large even pieces. 2: Sear the vegetables over high heat until nicely charred. 3: Cut chicken thighs into even pieces and season with salt, pepper, garlic, and garam masala. 4: Sear the chicken over high heat until all sides are nicely browned. 5: Pour in one bottle of Red Boat Vietnamese spicy lemongrass curry. 6: Add 1.5 tablespoons of butter and mix. 7: Cover and braise for about 25 minutes. 8: Add the seared veggies back in and stir until everything is nicely combined. 9: Serve with white rice and enjoy.
