1: Grab a Prime rib eye, season it well with SPG, and let it rest to room temp. 2: Get your lodge cast iron pan screaming white hot (at least 600 degrees). 3: Set the meat flat on one side for about 3 minutes without touching it until a beautiful crust forms. 4: Turn the steak and sear the edges before flipping it. 5: Immediately turn down the heat to medium before adding a tablespoon of butter, garlic, and fresh rosemary. 6: Baste the steak all over then remove from pan and let rest for at least 5 minutes. 7: For the potatoes, score, season, sear, and roast them at 425 for about 20 minutes until crispy crust forms and center is tender. 8: Top roasted potatoes with sour cream and crispy bacon.
