These Sticky Sweet Adobo riblets are infused with Filipino flavors and roasted until they’re fall-off-the-bone sticky goodness. They are pressure steamed in an adobo broth infused with soy, vinegar, and bay flavors, topped with an adobo banana ketchup BBQ glaze for a sweet twist. Perfectly served with rice and Atcharra.

1: Season ribs generously with salt, pepper, and garlic powder. 2: Add soy, vinegar, and bay leaves into a pressure cooker. 3: Add liquid smoke (if using) into the pressure cooker. 4: Place the ribs on a trivet in the pressure cooker, ensuring they are not in the liquid. 5: Set the pressure cooker on high for 20 minutes to steam-infuse the flavors into the ribs. 6: For the BBQ glaze, sear whole garlic and onion, then add soy, vinegar, banana ketchup, brown sugar, black pepper, and cornstarch to thicken. 7: Remove the ribs from the pressure cooker and toss them in the BBQ glaze until well coated. 8: Broil the ribs at 550°F on the top rack for about 5 minutes, watching closely to avoid burning. 9: Remove when the glaze is bubbling and caramelized. 10: Serve the ribs with rice and Atcharra (pickled papaya).
