A traditional Filipino cured meat, marinated in pineapple juice, ketchup, and spices for a sweet and garlicky flavor. This recipe uses a shortcut with Mama Sita’s Tocino flavor package, making it quick and easy. Chicken thighs are marinated for at least 4 hours, then baked and broiled for a crispy finish. It's served with Kim Chee, corn, and rice with Furukaki seasoning.

1: Marinate chicken thighs in pineapple juice, ketchup, and spices for at least 4 hours or overnight. 2: Slice chicken partially to allow the marinade to seep deep into the meat. 3: Prepare a thick sauce by mixing the liquid from the marinade with honey and cornstarch. 4: Baste the chicken with the sauce. 5: Bake chicken on a lower rack at 425°F for about 30 minutes. 6: Baste again and then broil on the top rack for about 5 minutes until thickened and charred.
