1: Take 4 Tbsp. of your favorite Kare seasoning packet and add it to a mixing bowl. 2: Stir in 4 Tbsp. of Kewpie or regular mayo and 1 Tbsp. of cornstarch to combine. 3: Prepare the chicken by coating it in the mixture and either frying in a pan or air frying at 450°F for 12 minutes until a crust forms. 4: To make the Kare Kare sauce, take 1 heaping Tbsp. of your favorite Kare seasoning, add 1/8 tsp. of black pepper, 1 tsp. of minced garlic, ½ tsp. of bagoong shrimp paste, 1 Tbsp. of peanut butter, 1 tsp. of brown sugar, ½ tsp. of atchuete powder, and ½ tsp. of red chili peppers in a bowl. 5: Pour in 2 Tbsp. of boiling hot oil and mix thoroughly. 6: Boil a packet of instant noodles without using the flavor packet and toss it in the Kare sauce, adding noodle water if needed. 7: Layer in your preferred veggies such as seared Chinese egg plant and bok choy. 8: Add crushed peanuts and sliced chicken on top, and drizzle with extra sauce if desired.
